Please enjoy my favorite squash flower recipe! “Nonno
Giovanni” visited this country from Caserta, Italy in 1978
and taught the family how to make his version of this
special treat!
● 2 cups flour
● 2 small/medium sized zucchini
● 3 eggs
● 2 cups parmesan
● 1 small onion chopped fine
● 1 garlic clove chopped fine
● 2 teaspoon baking powder
● 3 cups milk (to moisten the batter)
● salt and pepper to taste
● Fresh Basil (A LOT!)
● and of course, squash flowers
Mix all ingredients together, make sure well stirred.
Should have consistency of pancake batter. Use canola
oil at med heat and spoon batter into oil. Brown on
both sides. Drain well and while still a little hot, roll in
Romano cheese!
